My Mother-In-Law's Recipe: Albondigas

During the first few days of your period, it’s essential to eat foods with protein/iron due to your relative blood deficiency. Foods high in protein and iron will also sustain your energy and help to rebuild your blood and hormones. 

The most ideal animal protein to consume sometime during your period is LIVER. Not only is liver high in iron, but it’s also a great source of Vitamin B12 which is essential for detoxification pathways and aids your body in converting food into energy. 

I like to recommend beef liver, opposed to other sources, because of its neutral temperature.

Liver is a very acquired taste so I like to mask the flavor, grind it up and add it to ground beef to make really tasty meatballs. I often make a Mexican inspired meatball soup called Albondigas. My mother in law taught me how to cook this and I will treasure this gem forever.

Here’s what you’ll need:

For the meatballs

  • 1.5 LBS of ground beef

  • ⅓ cup ground beef liver

  • 1 tsp salt

  • 1 tsp ground pepper

  • 1 tsp garlic powder

  • 1 tsp cumin 

  •  ½ cup finely chopped onions

  • ¼ cup long grain rice

  • 1 egg

For the soup

  • 6-8 cups of chicken broth

  • 1 can diced tomatoes

  • ½ cup chopped onions

  • 2 chopped celery stalks

  • 1 chopped carrot

  • ½ cup cilantro

  • 1 tsp oregano

  • ½ tsp cumin

Instructions

Combine the ground beef and the ground beef liver with the salt, pepper, garlic powder, and cumin. Add in the finely chopped onions, long grain rice, and egg. Mix together well.

  1. Make 1 inch meatballs and put in the fridge while you cut the vegetables and boil the broth.

  2. Boil the chicken broth and add the tomatoes, chopped onions, celery, carrot, cilantro, oregano, and cumin. 

  3. Slowly drop in all the meatballs one by one and bring back to a boil. Simmer for 15 min. Add salt and pepper to taste.

  4. Serve hot with fresh cilantro and a lime wedge.
